Yesterday was my friend’s Asia’s birthday and she had a dream to have a couple of focaccias at her party. I’m so happy that zucchini flowers are still in season. Every focaccia is a blank canvas and you can put on top whatever you want! This time I made it only with zucchini flowers and salt flakes, but my favourite one is made with olives and rosemary. There are thousands of possibilities!

This overnight focaccia has a super crisp bottom and pillowy, airy top. It's so easy and hands off to make and can be used for dipping in oil or sliced for sandwiches!

With an 8 to 12 hour rise time, you can start this focaccia recipe at night and bake it in the morning, or start it in the morning and bake it at night. I decided to top mine with the last zucchini flowers from Gospodarstwo Majlert.

To be honest it’s hard to write this recipe, as I measure everything at a guess. I add water until the dough is nice and wet, but holds structure. I still tried to put some measurments for you.
